Through four generations the Kelly’s Bakery business has grown, changed and adopted to new innovations, customer needs and market demands. Kellys now produce products for distribution across Ireland and continental Europe. Their customer network includes frozen food service companies, leading retailers, service station networks and coffee franchises.
Production at Kelly’s Family Bakery
Their product range covers a variety of ambient and frozen breads and confectionery. They also specialise in customized product offerings.
Working from a 15,000sq foot purpose-built factory located within 25km of Rosslare Europort they produce 24 hours per day, with blast freezing and freezer storage all undertaken on site. Their new donut plant has the capacity to produce up to 6,000 donuts per hour & they currently have 3 shifts that keep them operating 24 hours per day.

Everything from Goods Inwards, Sales Order Processing, Purchase Order Processing, Production Control, Data Capture, Data Recording, HACCP compliance, right through to Stock Movements & Dispatch of Goods. NOUVEM took care of all of their weighing, labelling and scanning requirements.
Recipe Batch Control is a key feature of the NOUVEM Bakery Management System; managing the recipes from both the office and factory with advanced reporting capabilities.
Full Traceability was vital to the Company and NOUVEM excelled all expectations. Kelly’s Bakery have a GFSI (Global Food Safety Initiative) certified factory (BRC Certification A Grade) and meet the quality & production requirements daily for large customers such as Lidl & Aryzta.
